Wholesome red rice dosa, the easy way.

Made with traditional red rice for a naturally rich colour and a mildly nutty taste. Great as dosa, and even better as a thick vegetable uttapam.

Best for: uttapam with onion, tomato, carrot and coriander.

Just add water or curd, soak 30 minutes, and cook.

Ready in 3 simple steps:

Mix: Take 1 cup of dosa mix. Add about 1 cup of water or curd (your choice: curd gives a softer, mildly tangy dosa; water gives a crisper one). Whisk to a smooth, pourable batter with no lumps.

Soak: Rest the batter for 30 minutes. Add salt to taste if needed.

Cook: Heat a tawa, pour a ladle of batter, spread in a circle, drizzle oil or ghee around the edges and cook until golden and crisp. Flip if you like it soft on both sides.

Tip: thicker batter for uttapam and paniyaram; thinner batter for crisp roast dosa.
